ХРОМАТОГРАФИЧЕСКИЕ МЕТОДЫ В АНАЛИЗЕ И ИДЕНТИФИКАЦИИ ВИНОГРАДНЫХ ВИН

Аннотация


Проведен анализ опубликованных работ, нормативных документов и оригинальных статей, посвященных методам анализа вин. Показано, что при проведении анализа виноматериалов для практических и научных целей наиболее часто используются методы хроматографии, которые позволяют определить широкий круг основных органических и неорганических веществ, а также следовых содержаний других компонентов. На основе анализа литературных данных проведена оценка содержаний основных компонентов в винах различного географического происхождения, найденных с использованием различных методов хроматографии, обсуждены аналитические аспекты изучения состава, предполагаемые факторы, затрудняющие интерпретацию результатов анализа. Обсуждены особенности и возможности применения различных вариантов метода высокоэффективной жидкостной хроматографии при оценке качества винодельческой продукции. Рассмотрены вопросы применения капиллярной газовой хроматографии, газовой и тандемной масс-спектрометрии для определения компонентов виноградного вина. Более детально рассмотрены публикации и разработанные методики контроля качества вин, реализованные с применением методов капиллярного электрофореза, приведены пределы обнаружения компонентов, погрешности, составы электролитов, основные условия анализа.
